Ravello House Pizza
Our very own Ravello house pizza has a California inspired style that incorporates the modern interpretation of the traditional pie. This 16'' thin crust pizza is cooked in our custom wood-fired oven. We use this crust on our 'build your own pizza' where we have crowd favorite ingredients such as pepperoni, mushrooms and bacon. For the more adventurous, ingredients like soppressata (spicy cured Italian salami) & guanciale (full flavored cured pork jowel) are highly recommended.
Our genuine Neapolitan pizza dough consists of 00 flour, brewer's yeast, salt and water. 00 flour (commonly called doppio zero flour) is a special Italian milled flour that is ground powder-fine. Handling and proofing methods are different from our traditional dough which leads to a truly unique taste and texture. It requires a 36 hour rising process where the dough is formed by hand to be no more than 3 millimeters (0.12 in) thick. The pizza is then baked in a wood-fired oven which forms a unique leopard-skin pattern on the crust. Its classic characteristics are a soft, elastic and tender crust.
